Giant Baked Beans
- 1 can butter beans
- 1 cup tomato passata
- 1 tbsp tomato purée
- 1/2 red onion very finely diced
- 1 garlic clove crushed
- 1 tbsp agave syrup or brown sugar
- 2 tsp liquid smoke see notes
- 1 tsp worcestershire sauce see notes
- 1 tsp balsamic vinegar
- 1 tbsp vegetable oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup water
Preheat the oven to 160 degrees C.
Rinse and drain the butter beans and add to a baking dish. Add the rest of the ingredients. Mix well until everything is combined.
Bake in the oven for an hour, stirring every 15 minutes. Once the beans are cooked through and the sauce has nicely thickened it's ready to serve.
Best on crusty bread or toast with lashings of vegan butter but would also be great as a jacket potato filling.
