Iced Coffee

A homemade vegan alternative to your coffee chain drink: 3 ingredients, sugar-free and you can save money and a plastic cup. Good all round!

Ingredients (makes 1 large or 2 small iced coffees)

  • 2 tsp instant coffee or 2 espresso shots
  • 100ml boiling water
  • 6 tbsp agave syrup
  • 250ml non-dairy milk (I use soy)
  • Handful of ice

Method

Add the instant coffee to a large glass or mixing jug with the boiling water and stir until the coffee dissolves. If you’re using espresso, make your shots and add to the jug. Then stir in the agave syrup until you have a coffee syrup.

Add it to a blender with the milk and ice and blend until you have a coffee slushie (similar to a certain trademarked iced coffee you can buy).

If you don’t have a blender or just prefer a straight iced coffee, add the milk and ice and shake to combine with the coffee syrup mixture. You’ll probably want to use slightly less agave syrup as the ice doesn’t become part of the drink this way.

If you’re feeling fancy, mix some more coffee and agave syrup together and drizzle over the top.

Add to your favourite glass or reusable cup and you’re ready to go!
