A classic and tangy condiment to go with fish inspired dishes
Ingredients (2 servings)
- 1 cup vegan mayo
- 1 shallot (finely diced)
- 1 small gherkin (finely chopped) & 1 tbsp gherkin juice
- 1 tbsp capers (finely chopped)
- 1/4 cup parsley (finely chopped)
- Squeeze of lemon juice
- Pinch of sea salt
- Pinch of black pepper
Chop the shallot, gherkin, capers and parsley finely and add to a bowl.
Add the mayo, lemon juice, salt and black pepper and stir together.
Keep in the fridge until serving.
I like to add mine to a vegan fish finger sandwich, using fish fingers from the VBites Making Waves range, topped with rocket in bread or a roll, served up with steamed veggies for a light lunch or dinner.
