Tomato, Cress & Cream Cheese Sandwich
It's often hard to make a quick vegan sandwich filling but this one is perfect for a fresh and light lunch

Servings 1 sandwich
- 2 slices wholemeal bread
- 2 tbsp vegan cream cheese see notes
- 1 tomato medium
- Handful of cress
- Pinch of black pepper
Spread the cream cheese onto both slices of the bread. Thinly slice the tomato and lay onto one slice of the bread.
Rinse and drain the cress, drying it with a paper towel if necessary. Lay out on the other slice of bread to the tomato. Grind some black pepper onto both slices.
Place the the two slices together, cut into halves or quarters and serve.
I used the Violife Original Vegan Cream Cheese.
