Winter Bircher Muesli
- 50 g oats
- 150 g non-dairy vanilla yoghurt or plain yoghurt + 1/2 tsp vanilla extract
- 200 ml non-dairy milk
- 2-3 tbsp agave syrup to taste
- 75 g blackberries halved or slightly crushed
- 1/2 apple grated
- 1/2 orange, zest of
- 1/2 tsp cinnamon
- Handful of pomegranate seeds
- 2-3 walnuts crushed
Add all the ingredients, except the walnuts, to a mixing bowl and stir together well. Place in the fridge overnight (see notes).
In the morning the oats will be soft and ready to serve into bowls.
Top with the crushed walnuts and more orange zest, grated apple and pomegranate seeds. Sprinkle over a pinch of cinnamon and it's ready to serve.
This type of muesli is designed to be an easy breakfast which you can prepare the night before and it will be ready in the morning for a quick grab and go. However if you don't have time for this, leaving the mixture to chill in the fridge for 20-30 minutes instead is enough to soften the oats slightly and is a faster alternative.
