A tangy summer favourite with only 3 ingredients
Ingredients (serves 6)
- Juice of 5 lemons (~250ml)
- 1l sparkling water or tonic
- 1/4 cup agave syrup
Roll the lemons between the palm of your hand and a hard surface to get as much juice as possible from each one. It takes a little effort but trust me, the juice is really worth the squeeze on this one.
Once the lemons are prepped, cut them in half (be careful because if you rolled them enough, the juice will start to gush out at this point) and squeeze out the juice into a large bowl or small jug. You will probably need to strain out the seeds before adding the other ingredients so it’s easier to juice the lemons into a separate container and then strain it into a larger jug.
Measure out the sparkling water and add it to the juice, followed by the agave syrup and give it a thorough stir.
Add some ice just before serving.
