Creamy Garlic & Chive Mash
- 3-4 large potatoes
- 2 large garlic cloves
- 1-2 tbsp olive oil
- 2 tbsp vegan mayonnaise
- Handful of fresh chopped chives
- Pinch of black pepper
Peel the potatoes and chop into small cubes. Crush the garlic cloves
under a knife, peel and add to a saucepan with the potatoes. Cover with
water and boil for around 20 minutes or until very soft.
Once cooked, drain the potatoes and mash with the garlic until there are no lumps.
Drizzle over the olive oil, add the mayonnaise, chives and black pepper and stir together until creamy.
