Mushroom toast enhanced with simple flavours of garlic, lemon & thyme with a rich cream cheese base for a fast but delicious brunch.
Ingredients (serves 1)
- 1 tbsp oil
- 4-6 mushrooms (finely sliced)
- 1 garlic clove (minced)
- Squeeze of lemon juice
- Sprig of thyme
- 2 tbsp vegan cream cheese
- Pinch of salt & black pepper
- 1 slice of wholemeal bread
- Rocket to garnish
Heat the oil in a frying pan on medium-high heat. Add the sliced mushrooms and sauté for 4-5 minutes until they have softened and are starting to brown.
Add the minced garlic and sauté for another 1-2 minutes.
Put the bread on to toast. Add the cream cheese to a bowl with the salt and pepper and mix. Spread evenly onto the slice of toast.
Squeeze the lemon juice over the mushrooms, followed by the leaves from the thyme sprig and mix well. Sauté for another minute and then spoon onto the toast.
Garnish with rocket and it’s ready to enjoy for a quick breakfast or lunch.
