Inspired by the classic poppadom condiment, this homemade version is as fresh and fragrant as the real thing.
Ingredients (serves 8)
- 1 large red onion (halved & thinly sliced )
- 1-2 tbsp cider vinegar
- 1/2 cup water
- 2 tsp cumin seeds
- 2 tbsp tomato puree
- 2 tbsp water
- 1 tsp agave syrup
Pull the sliced onion into single shreds and place into a mixing bowl. Add the cider vinegar and water and toss together. Cover and set aside for 10-15 minutes.
Once they have finished soaking, drain the onions and chop into smaller, chunkier shreds. You can use a food processor for this but be sure not to chop them too finely. Place back in the mixing bowl.
In a separate bowl, mix the tomato puree, water, agave syrup and cumin seeds into a thin sauce. Add to the onion mixture and stir until all the onions are coated.
Cover and set aside in the fridge for at least half an hour before serving to let the flavours marinate. It will keep in the fridge for up to 24 hours.
